Suggestion:
I am of an age in which people did long distance car travel for holidays in Europe since air travel was not affordable when I was young. I still would not recommend your boyfriend should rent a car. At first one way car renting involves a huge fee since the car needs to be transported back to the Netherlands by truck/trailer. Secondly the distance of 2420 kilometers from Amsterdam to Catania would require more than 24 hours non-stop driving which nobody is able to do. It would take at least 2 days of driving to have the appropriate rests in between.
It would be more convenient to step on a train from Amsterdam like:
06:16 depart Amsterdam – 09:35 arrive Paris Nord
10:24 depart Paris Est – 15:00 arrive Zurich
15:09 depart Zurich – 18:50 arrive Milan
20:15 depart Milan – 13:33 arrive Catania
and continue by a ferry to Malta.
There might possibly also plane connections be available from southern Italy to Malta, since the volcano ash cloud seems to loose its intensity the further down Europe it goes..

Actually I really don't understand what you mean by "by car". Malta is an island so you need at least a ferry in order to get there without any airplane.

Anyway, if this may interest you, from Amsterdam to Reggio Calabria (the Italian Southernmost city in Mainland Europe) it takes 22 hours and 30 minutes about according to google.maps…
